This vegan red lentil soup is a hearty, nutritious, and easy-to-make dish, perfect for a cozy meal. It has a creamy texture and a rich, warm flavor, packed with plant-based protein, fiber, and essential vitamins.


Ingredients:

🔸 Main Ingredients:

  • 1 cup red lentils, rinsed
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, grated
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • ½ tsp paprika
  • 4 cups water or vegetable broth
  • Salt and black pepper to taste

🔸 For Garnishing (Optional):

  • Juice of half a lemon
  • 1 tsp olive oil or coconut oil
  • Fresh cilantro or parsley, chopped
  • Toasted bread on the side

Instructions:

🔹 1. Prepare the Ingredients:

  • Rinse the red lentils thoroughly under running water until the water runs clear to remove excess starch.
  • Chop the onion, garlic, carrot, and tomato.

🔹 2. Sauté the Aromatics:

  • In a medium pot, heat a teaspoon of olive oil over medium heat.
  • Add the chopped onion and sauté until translucent (about 3 minutes).
  • Stir in the minced garlic and cook for another minute until fragrant.

🔹 3. Add Lentils and Vegetables:

  • Add the grated carrot and chopped tomato (or tomato paste), stirring well.
  • Add the rinsed lentils and spices (cumin, turmeric, paprika, salt, and black pepper), mixing everything together.

  • Pour in 4 cups of water or vegetable broth and bring to a boil.
  • Reduce the heat, cover, and let it simmer for about 20 minutes until the lentils are soft.
